Happy Thanksgiving!

 
 
 
 
I hope you all have a wonderful Thanksgiving! We are having Thanksgiving lunch at my parents house. It’s lunch, or technically 11:30am, because my father, a grown man, won’t wait to eat the main meal in the evening. (Think, grown man who’s used to throwing temper tantrums, and getting his way.)
 
The other day I was able to buy 2 really big turkeys for approx 30 cents per pound. My next question or polite demand… I want recipes people! Casseroles, soups, chilis… anything and everything that you could use left over turkey. They can be ‘old tried and trues’ or new ones that you think sound good. Post ’em people!

    We make a awesome turkey soup with the left overs.  I love homemade soups!!

    I give hubby the job of taking all the meat off the bones..lol I do the rest.

    I don\’t have any recipes for left-overs…I\’m happy just making a cold turkey sandwich…Turkey cranberry sauce, mayo, toasted bread–that\’s it.  Then chase it down with left-over pie.

    I N G R E D I E N T S…2 cups Cooked Norbest Turkey, cut into 1/2-inch cubes1 package (1 1/2 ounces) taco seasoning mixWater4 Corn (6-inch) tortillas1/4 cup canned refried beans1/4 cup reduced-calorie cheddar cheese, shredded1/2 cup tomatoes, chopped1/2 cup lettuce, shredded2 tablespoons onions, chopped1/2 cup taco saucePlain low-fat yogurt (optional)Guacamole (optional)
    D I R E C T I O N S…In large skillet over medium heat, combine turkey and taco seasoning with measurement of water recommended on seasoning package. Bring mixture to boil; reduce heat and simmer 5 minutes, stirring occasionally. On large cookie sheet arrange tortillas. Bake in 375 degree F. oven 5 to 7 minutes or until tortillas are crispy and lightly browned. Spread each tortilla with a tablespoon of beans. Top with 1/4 meat mixture and cheese. Return to oven 2 to 3 minutes or until cheese is melted. To serve, top with tomatoes, lettuce, onions and taco sauce. Garnish with yogurt and guacamole, if desired.

    Hi Steph,
    Hope you had a good thanksgiving with your family.
    Regarding recipes for left over turkey I\’m afraid I can\’t help you there as apart from  having it cold with pickles salad and crusty bread the next day or making a curry is all I know. To be honest my family get sick of it and I always end up throwing a lot of it away. This year I will be just buying the turkey crown and cooking a bit of pork with it.
    I am enjoying a bit of me time today lol 🙂 I have a day off work so I have just had my future daughter-in-law round to cut and colour my hair, I\’m really pleased with it. I am going to have a spot of lunch and then do some ironing while watching daytime tv. And why not eh!

    Yo!  Your Dad is a man after my own heart – I have been pulling that for years.  As to recipes – just think of suff you like that might do well with turkey added or substituted.  Make some stuff uo, then name the successes after yourself and publish.  If you run out of turkey, use cat.

    Jane, You gourmet chef you! Actually that\’s one thing I can\’t stand on a sandwich. I remember my grandmother used to make them with butter. No matter how hungry, I wouldn\’t eat it. Just an aversion I have. lol
